Green Chicken Enchiladas

An ode to our Texas roots and our new home in Colorado, our new Green Chicken Enchiladas prove that some flavors are worth carrying across state lines. 

We smoke marinated chicken thighs with pecan wood chips until they're rich and deeply savory, then let them simmer in a chile verde with real character: blistered jalapeños, roasted Hatch green chiles, Anaheim chiles and tangy tomatillos. Toasted corn tortillas hold it all together, and a generous amount of melty Monterey Jack makes every bite one you'll want to keep going back for.
